<p class="wp-block-paragraph">En ce week-end pluvieux de novembre, j&rsquo;ai cherché un peu de réconfort&#8230;  Alors j&rsquo;ai préparé une tarte qui sent bon l&rsquo;automne et régale toute la famille : la tarte bourdaloue aux pommes ! Une délicieuse tarte aux pommes à la crème d&rsquo;amandes moelleuse sur une pâte bien croustillante, un délice ! </p>



<p class="wp-block-paragraph">Pour l&rsquo;anecdote, c&rsquo;est la tarte préférée de mon compagnon. Anniversaire, dîner entre amis ou en amoureux&#8230; Je la fais (très) souvent et c&rsquo;est toujours un succès ! Vous pouvez la préparer la veille, elle supporte très bien une nuit au frigo. </p>

<h2 class="wp-block-heading">Origine de la tarte bourdaloue</h2>



<p class="wp-block-paragraph">La tarte bourdaloue est un dessert typiquement français. Née à Paris, plus précisément rue Bourdaloue, c&rsquo;est la cousine de la tarte amandine. Traditionnellement, elle se prépare avec des poires mais j&rsquo;ai l&rsquo;habitude de la faire avec des pommes, les deux fruits fonctionnent très bien.</p>

<h2 class="wp-block-heading">Les ingrédients</h2>



<p class="wp-block-paragraph">Voici ce dont vous aurez besoin pour préparer ce dessert irrésistible <img src="https://s.w.org/images/core/emoji/17.0.2/72x72/1f924.png" alt="🤤" class="wp-smiley" style="height: 1em; max-height: 1em;" /> :</p>



<p class="wp-block-paragraph">&#8211; <strong>Du beurre demi-sel </strong>: pensez à sortir votre beurre à l&rsquo;avance et à le laisser à température ambiante car il doit être bien mou au moment de préparer la pâte et la crème d&rsquo;amandes </p>



<p class="wp-block-paragraph">&#8211;<strong> Du sucre blanc en poudre</strong> : j&rsquo;utilise toujours du sucre blanc mais vous pouvez aussi utiliser du sucre roux ou de la vergeoise, par exemple, pour la crème d&rsquo;amandes. Vous pouvez également faire la pâte avec du sucre glace </p>



<p class="wp-block-paragraph">&#8211; <strong>Des œufs</strong> : un pour la pâte et un pour la crème. </p>



<p class="wp-block-paragraph">&#8211; <strong>De la farine T55</strong> : riche en gluten, c&rsquo;est la farine la plus adaptée pour réaliser la pâte. Évitez les farines complètes pour cette recette. </p>



<p class="wp-block-paragraph">&#8211; <strong>De la poudre d&rsquo;amandes</strong> : je l&rsquo;achète toute faite mais vous pouvez aussi faire torréfier des amandes et les mixer. </p>



<p class="wp-block-paragraph">&#8211; <strong>Des pommes (bien sûr !) </strong>: aujourd&rsquo;hui j&rsquo;ai pris des Fuji mais les Royal Gala fonctionnent très bien aussi. Il faut des pommes fermes qui supportent la cuisson sans se transformer en compote. Vous pouvez aussi utiliser d&rsquo;autres fruits comme des poires ou des fruits rouges !</p>



<p class="wp-block-paragraph">&#8211; <strong>Du rhum</strong> : c&rsquo;est optionnel mais ça apporte une saveur agréable qui se marie bien avec les pommes. J&rsquo;utilise un rhum arrangé de la Réunion que j&rsquo;ai rapporté de vacances en 2020. Il est très fort mais top les desserts. Vous pouvez également ajouter de la fleur d&rsquo;oranger&#8230; ou rien du tout, en fonction de vos goûts et de ce que vous avez sous la main. </p>



<p class="wp-block-paragraph">&#8211; <strong>Des amandes effilées</strong> : ce n&rsquo;est pas obligatoire non plus mais ça apporte un peu de croquant à la surface de la tarte et ça renforce le goût d&rsquo;amande. </p>



<p class="wp-block-paragraph">&#8211; <strong>Du sucre glace</strong> : vous n&rsquo;êtes pas obligé.e d&rsquo;en rajouter non plus, c&rsquo;est juste pour la déco une fois la tarte refroidie. </p>

<h2 class="wp-block-heading">Le matériel </h2>



<p class="wp-block-paragraph">Vous n&rsquo;avez pas besoin de beaucoup de matériel pour réaliser cette tarte, elle est très accessible. </p>



<p class="wp-block-paragraph">Pour réaliser la pâte et la crème, munissez-vous de votre plus belle <strong>spatule</strong>. Je fais la pâte à la main (dans un cul-de-poule) car c&rsquo;est facile et rapide, mais si vous ne voulez pas vous salir les doigts, vous pouvez la faire au robot muni de sa feuille (pas le crochet). </p>



<p class="wp-block-paragraph">Pour étaler votre pâte sucrée, vous aurez bien entendu besoin d&rsquo;un <strong>rouleau</strong> à pâtisserie. </p>



<p class="wp-block-paragraph">Pour la cuisson de la pâte, j&rsquo;utilise <strong>un cercle à tarte</strong> perforé de 20 cm (<a href="https://amzn.to/3QlUcjH">comme celui-ci</a>) mais un moule à tarte classique fonctionnera très bien aussi. Pensez simplement à ajuster les quantités si votre moule est plus grand. Si comme moi, vous utilisez un cercle à tarte, vous aurez besoin d&rsquo;une <strong>plaque de cuisson</strong> sur laquelle déposer votre tarte, ainsi que d&rsquo;une feuille de cuisson ou d&rsquo;un tapis en silicone (<a href="https://amzn.to/3QGbvx7">comme celui-ci</a>). </p>

<h2 class="wp-block-heading">Mes conseils &amp; astuces </h2>



<p class="wp-block-paragraph">Ne travaillez pas trop la pâte : arrêtez de la travailler quand elle est homogène. Les quantités indiquées ci-dessous sont trop grandes pour la recette, vous obtiendrez trop de pâte. Mais étant donné qu&rsquo;il est difficile de couper un œuf en deux, c&rsquo;est impossible d&rsquo;en faire moins. Vous pouvez alors congeler les restes de pâte : il suffit de l&rsquo;étaler finement sur un papier cuisson et de l&rsquo;enrouler dedans (comme une pâte du commerce), puis de l&#8217;emballer dans du film alimentaire. Vous pouvez aussi réaliser des biscuits avec les chutes de pâte ! </p>



<p class="wp-block-paragraph">Ne travaillez pas trop non plus la crème d&rsquo;amandes : elle pourrait gonfler et déborder à la cuisson. Arrêtez de mélanger quand elle est bien homogène. </p>



<p class="wp-block-paragraph">Il sera nécessaire de pré-cuire la pâte. Pour éviter qu&rsquo;elle ne s&rsquo;effondre dans votre cercle/moule à la cuisson, laissez-la reposer au frais, elle doit être bien froide et ferme quand vous l&rsquo;enfournez. </p>
